Nettoyez la volaille et retirez les abats. Huilez-la et salez à votre goût.
Préparez la farce : coupez les petits pains en cubes et saupoudrez de persil. Ajoutez le jambon, le poivron émincé et l'oignon que vous avez fait revenir. Versez sur le pain les œufs battus avec le lait. Salez et poivrez à votre goût.
Farcissez le poulet. Ajoutez 1 à 2 dl d'eau et arrosez la viande avec son jus pendant la cuisson.
